During our internship in Lycée Agricole F.Garcia Lorca we got the opportunity to work with the students of food processing. It was our first time working in agrofood processing so the experience was both challenging as well exciting. We had some language barriers but in spite of that we all coordinated in an efficient way. The products processed were tea, apple juice and verbena, pie, cake, jam, sausage etc. At the end of the day the products were analyzed and feedback was based on different parameters .
This was management training for the second year students as they are going to be the managers at different factories. So they were managing the whole process and looking after all the activities that were being performed.
We made jam which consisted of sweet potato and potato and spices. The initial step of the processing was to select and cut good quality potatoes and with proper hygiene to prevent contamination. We prepared a paste of the vegetables that were oven cooked in wet heat.
Then addition of some ingredients to the mixture was done through proper channels and in appropriate amounts as to give the product its required taste & texture which is very important for the product. After this step it was necessary to check the pH & sugar content in the product. When the mixture obtained the required sugar content in the evaporator it was further taken for packaging in a glass jar. The final step was to seal the lid of the jar using a sealing machine.
